Easy Tzatziki Recipe

Equipment

  • Cheesecloth or a clean kitchen towel
  • Whisk
  • Airtight container for storage

Ingredients
  

  • 2 cups Greek yoghourt
  • 1 cucumber  grated and drained
  • 2 cloves garlic minced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill chopped
  • Salt and pepper to taste

Instructions
 

  • Grate the cucumber and place it in a clean kitchen towel or cheesecloth. Squeeze out the excess moisture until the cucumber is dry.
  • In a mixing bowl, combine the Greek yoghurt, minced garlic, and grated cucumber.
  • Add the fresh lemon juice, extra virgin olive oil, and chopped dill to the mixture. Season with salt and pepper to taste.
  • Whisk all the ingredients together until well combined. Taste and adjust the seasoning if needed.
  • Cover the bowl and chill the Tzatziki in the refrigerator for at least 2 hours, allowing the flavours to meld.
  • Before serving, drizzle with a touch of olive oil and garnish with a sprig of fresh dill if desired.

Notes

  • Greek yoghurt is recommended for its thick and creamy consistency, but you can strain regular yoghurt to achieve a similar texture.
  • To enhance the Tzatziki's flavour, allow it to chill in the fridge for a few hours or overnight before serving.
