- 2 cups Greek yoghourt
- 1 cucumber grated and drained
- 2 cloves garlic minced
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tbsp fresh dill chopped
- Salt and pepper to taste
Grate the cucumber and place it in a clean kitchen towel or cheesecloth. Squeeze out the excess moisture until the cucumber is dry.
In a mixing bowl, combine the Greek yoghurt, minced garlic, and grated cucumber.
Add the fresh lemon juice, extra virgin olive oil, and chopped dill to the mixture. Season with salt and pepper to taste.
Whisk all the ingredients together until well combined. Taste and adjust the seasoning if needed.
Cover the bowl and chill the Tzatziki in the refrigerator for at least 2 hours, allowing the flavours to meld.
Before serving, drizzle with a touch of olive oil and garnish with a sprig of fresh dill if desired.
- Greek yoghurt is recommended for its thick and creamy consistency, but you can strain regular yoghurt to achieve a similar texture.
- To enhance the Tzatziki's flavour, allow it to chill in the fridge for a few hours or overnight before serving.
