Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp  baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups water
  • 2 tbsp vegetable oil or melted butter
  • Cooking spray or additional oil for greasing the griddle

Instructions
 

  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Add water and vegetable oil or melted butter to the dry ingredients. Mix until just combined. Lumps are okay; do not overmix.
  • Preheat your griddle or skillet over medium heat and lightly grease with cooking spray or oil.
  • Using a ladle or measuring cup, pour mix onto the griddle to form pancakes.
  • Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  • Repeat until all the mix is used, adjusting heat as needed.
  • Serve your pancakes warm with your favorite toppings – maple syrup, fresh fruit, or whipped cream.
