Pizza Dough:
In a small bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit for 5-10 minutes until foamy.
In a large mixing bowl, combine flour and salt. Make a well in the centre and pour in the yeast mixture and olive oil.
Stir until the dough comes together. Knead on a floured surface for about 5 minutes until the dough is smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise for about 1 hour, or until it doubles in size.
Pizza Sauce:
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
Stir in crushed tomatoes and dried oregano. Simmer for 15-20 minutes, stirring occasionally. Season with salt and pepper.
Assembling and Baking:
Preheat your oven to the highest temperature (usually around 500°F/260°C) and place the pizza stone or baking sheet inside.
Roll out the pizza dough on a floured surface into your desired shape.
Remove the hot stone or baking sheet from the oven. Place the rolled-out dough on it.
Spread the pizza sauce evenly over the dough, leaving a small border for the crust.
Sprinkle a layer of shredded mozzarella cheese and add your choice of toppings.
Carefully transfer the pizza back to the hot oven. Bake for 10-15 minutes or until the crust is golden and the cheese is bubbly.
Remove from the oven, let it cool for a few minutes, then slice and serve.
