Equipment

  • Mixing bowls
  • Whisk
  • Non-stick skillet or crêpe pan
  • Ladle or measuring cup
  • Spreader tool (crêpe rake) or spatula

Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 cup whole milk
  • 2 eggs large
  • 2 tbsp butter melted
  • 1 tbsp sugar
  • 1/4 tsp salt
  • Additional butter for greasing the skillet

Instructions

  • In a mixing bowl, whisk together the flour, sugar, and salt.
  • In a separate bowl, beat the eggs and add the milk, melted butter. Mix well.
  • Gradually add the wet ingredients to the dry ingredients, whisking until you achieve a smooth, thin mix.
  • Let the mix rest for at least 30 minutes, or refrigerate overnight for enhanced flavour.
  • Heat a non-stick skillet or crêpe pan over medium heat and lightly grease with butter.
  • Pour a small amount of mix onto the skillet, swirling to coat the bottom evenly.
  • Cook until the edges lift and the bottom is golden brown, then flip and cook the other side.
  • Repeat until all the mix is used, stacking the Crêpes as you go.
  • Serve warm with your favorite fillings, such as Nutella, fresh berries, whipped cream, ham, cheese, or sautéed vegetables.

Notes

  • Achieve a thin consistency in the mix for authentic, delicate Crêpes.
  • Use a crêpe spreader tool or a tilted skillet to evenly distribute the mix for a thin and uniform texture.
  • Customize your Crêpes with sweet or savory fillings to suit any meal or occasion.
  • Ensure the skillet is well-greased to prevent sticking and make flipping easier.
  • Crêpes can be made ahead and stored between layers of parchment paper, then reheated as needed.
