Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder

  • 2 cup buttermilk
  • 2 eggs large
  • 1/4 cup unsalted butter melted
  • Cooking spray or additional butter for greasing the griddle

Instructions
 

  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, beat the eggs, then add buttermilk and melted butter. Mix well.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
  • Preheat your griddle or skillet over medium heat and lightly grease with cooking spray or butter.
  • Using a ladle or measuring cup, pour mix onto the griddle to form pancakes.
  • Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  • Repeat until all the mix is used, adjusting heat as needed.
  • Serve your pancakes warm with your favorite toppings – maple syrup, fresh fruit, or whipped cream.

  • For extra-fluffy pancakes, let the mix rest for a few minutes before cooking.
  • Adjust the thickness of the mix to your preference by adding more or less buttermilk.
