Ingredients
  

  • 1 whole duck about 5-6 pounds
  • Salt and pepper to taste
  • 1 tbsp  olive oil
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • Zest of one orange

Instructions
 

Preheat Oven:

  • Preheat your oven to 350°F (175°C).

Prepare Duck:

  • Remove giblets from the duck's cavity and pat it dry with paper towels.
  • Score the duck's skin in a crisscross pattern, being careful not to cut into the meat.

Season:

  • Rub the duck inside and out with salt, pepper, thyme, rosemary, garlic powder, and onion powder.
  • Sprinkle orange zest over the duck for a burst of citrus flavor.

Truss the Duck:

  • Truss the duck using kitchen twine to ensure even cooking and a beautiful presentation.

Roasting:

  • Place the duck on a roasting rack in a roasting pan, breast side up.
  • Roast in the preheated oven for about 2 hours or until the internal temperature reaches 165°F (74°C), basting every 30 minutes with olive oil.

Rest and Serve:

  • Allow the duck to rest for 15 minutes before carving.
  • Serve the succulent slices with your favourite side dishes.

Notes

  • For extra crispy skin, air-dry the duck in the refrigerator, uncovered, for a few hours before roasting.
  • Use a meat thermometer to ensure the duck reaches a safe internal temperature without overcooking.
