Ingredients
- 2 cups long-grain white rice
- 1 pound mixed seafood shrimp, mussels, squid, etc.
- 1 onion finely chopped
- 3 cloves garlic minced
- 1 bell pepper diced
- 1 cup cherry tomatoes halved
- 1/2 cup frozen peas
- 4 cups chicken or seafood broth
- 1/2 cup white wine optional
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the rice under cold water and set aside.
- In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant.
