  • Wooden spoon or spatula

Ingredients
  

  • 2 cups long-grain white rice
  • 1 pound  mixed seafood shrimp, mussels, squid, etc.
  • 1 onion  finely chopped
  • 3 cloves garlic minced
  • 1 bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup frozen peas
  • 4 cups chicken or seafood broth
  • 1/2 cup white wine optional
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Rinse the rice under cold water and set aside.
  • In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant.
  • Add rice to the pot and stir to coat with the oil. Cook for 2-3 minutes until the rice is lightly toasted.
  • Pour in the white wine (if using) and let it simmer for a minute to cook off the alcohol.
  • Add the mixed seafood, bell pepper, cherry tomatoes, and frozen peas. Stir well to combine.
  • Season with paprika, thyme, salt, and pepper. Mix thoroughly.
